FOOD SAFETY

A few important things to remember as far as food safety goes:

ALWAYS wash your hands before cooking. Make sure that the area you're working on is as clean as possible. It's a myth that anything dirty that manages to get in contact with your raw food will necessarily be killed or neutralized during cooking. Some stuff will survive all the way onto your plate and into your stomach.

Don't mix raw meat with any other food, especially cooked meat. Cross contamination occurs when you let raw meat come in contact with other food, for instance, hamburger.

Cook to proper temperatures, always let your food cook long enough to let the contaminants in it die. Before storing food in a refrigerator, make sure it is completely cooled, and that nothing is stored in layers more than an inch or two thick, as temperatures will not come down in the middle of a thick pile of food, and will give bacteria room to grow. Make sure that food is stored at a temperature below 40 degrees F.
